Since these tours take up the afternoon, your morning is free. If you are staying in the south and want to spend it on the water, Kayak Tenerife, another site by the same owner, rents out boards for paddle boarding in Palm-Mar.
What you see
The listings advertise the sunset from a viewpoint in the national park or on the way down, with Teide behind and, if the clouds sit below, the sea of clouds. None guarantees it, and several say so explicitly.
Note the ride back: one listing explains that they start descending before the sun sets so you watch it while riding, and another that the sunset is enjoyed mostly on the move. If you want to stop and watch, ask the operator what the stop is like.
Altitude
Sunset routes climb to about 2,100–2,400 m according to the listings. It is much cooler up there than on the coast and the temperature drops fast once the sun goes down. One listing recommends wearing a warm layer under the jacket on the evening departure.
What the rules say
Inside Teide National Park traffic may use the TF-21, TF-24 and TF-38 roads freely. Driving on its tracks is banned except for emergencies, patrols, park management and guided routes run by the park itself (plus a few authorised cases such as research or access to private land). Driving off the authorised roads and tracks is not allowed.

It depends on the listing and the time of year. Those that publish a time give, for example, 18:00 from Chío, 17:30 from Puerto de la Cruz or 17:00 from El Roque. Check the exact time when you pick a date on GetYourGuide.
